Amish Friendhip Starter Recipe

This is more than a recipe - it's a way of thinking. In our hi-tech world almost everything comes prepackaged and designed for instant gratification. So where does a recipe that takes ten days to make fit in? Maybe it's a touch stone to our past - to those days not so very long ago when everything we did took time and where a bread that took 10 days to make was not as extraordinary as it seems today. So...Here is the original Amish Friendship recipe for the starter used to create all these great Friendship baked goods!

1 pk Active dry yeast

2 1/2 c Warm water

2 c Sifted flour

1 tb Sugar

Dissolve yeast in 1/2 cup of the warm water in a deep glass or plastic container. Stir in remaining warm water, flour and sugar. Beat until smooth. Cover with loose fitting cover.

DO NOT REFRIGERATE!

The starter requires 10 days for fermentation as follows:

On days 1, 2, 3 and 4 Stir the batter

On day 5 Add 1 cup each milk, flour, sugar and stir

On days 6, 7, and 8 Stir the batter each day

On day 10 Add 1 cup each flour, sugar, milk; stir. The starter is ready to use!

This makes 3 cups batter to use in the recipes. If you want to you may pour 1 cup batter each into 3 containers and give some away. Save 1 cup to begin process all over again!

Remember to enclose one or more of the following recipes with each batch of starter you give away!

Amish Apple Spice Bread

Part #1

1 c starter

1/4 c Dry milk powder

1 c Flour

1 c Applesauce, unsweetened

Part #2

2 1/2 Cup sugar

1/2 Cup brown sugar

1/2 Cup butter

Part #3

1/2 Tsp salt

1 Tsp cinnamon

1/2 Tsp nutmeg

1/2 Tsp allspice

1/2 Tsp cloves

2 Tsp baking soda

Part 1--mix these and let set in covered bowl in a warm place then: Cream together part 2-- now add 1 egg beaten well, and then mix in Part 3.  Combine all ingredients and beat by hand. Bake at 350 for 35-45 minutes. Test for doneness and allow to cool in the pan

Frost with Cream Cheese Frosting:

3 oz Cream cheese; softened

1 lb Confectioners' sugar

1/2 c Butter; softened

1 ts Vanilla extract

Mix thoroughly at medium speed. Frost cake!

Amish Cinnamon Bread

1 cup Starter

2 c Flour

1 c Oil

1/2 c Milk

1 c Sugar

1/2 ts Baking soda

1 ts Vanilla

1 Large box vanilla instant pudding

3 Eggs

1/2 ts Salt

1 1/2 ts Baking powder

2 ts Cinnamon

Cinnamon sugar

Add all of the ingredients to starter except for the cinnamon sugar. Grease 2 loaf pans and coat with cinnamon sugar. Pour batter into pans and sprinkle with cinnamon sugar. Bake at 325 for 1 hour.

Amish Fruit Muffins


1 cup starter

2 cups flour
3/4 cup oil
1 tsp baking soda
2 tsp baking powder
1 cup sugar
3 eggs
1-1/2 tsp cinnamon
2 tsp vanilla

Stir Well. Now, add in:
1 cup nuts, chopped and/or,
1 cup apples, chopped, or
1 cup raisins, or
1 cup blueberries

Mix Well. Put into muffin tins well greased if not using liners. Sprinkle with topping on each
muffin and bake at 350 degrees F for 15-20 minutes or until done.

TOPPING

1 cup brown sugar
1/2 cup flour
1/4 cup margarine

Mix well and sprinkle over tops of muffins before baking.

In my life, God has granted me a blessing few can claim,

Some were family members like my mother oh so dear.
But most were people that I met, many every year.
No matter where life sent me, what city I called home,
I made life long friends and never felt alone.
My friends are there for me to listen and to care.
At times life wouldn't have been worth living if my dear friends were not there.
I could name them all one by one, a volume it would fill,
But they know who they are and that I love them and I always will.

Amish Sourdough Biscuits


3-3/4 cups flour
1-1/2 tsp salt
2 tsp baking powder
2 tsp baking soda
1/2 cup plus 1 Tbs. butter

Blend dry ingredients with butter until well cut in. Then add:
3/4 cup milk or buttermilk

1 12/ cups starter

Knead, roll, and cut. Place on greased baking sheet. Bake at 375 degrees F for 20 to 30 minutes. Makes 1-1/2 dozen biscuits.

Amish Table Bread

1 cup sugar
1/2 cup oil
1 tsp salt
1 - 1/2 cups warm water
1 cup starter
6 cups bread flour
Mix all ingredients thoroughly. Oil bottom & sides of large bowl & put bread dough in. Let stand overnight at room temperature. In morning, punch dough down 4-5 times and divide into 3 equal balls. Kneed each ball 8-10 times and put into 3 greased and floured loaf pans. Brush tops with oil and cover with oiled foil. Let stand 4-5 hours or all day.  Bake at 350 degrees for 30-40 minutes.

Apple Nut Amish Muffins

1 c starter

3 ea Eggs

2/3 c Vegetable oil

3 ts Vanilla

2 c Unbleached flour

1 c Granulated sugar

2 ts Baking powder

1 1/2 ts Ground cinnamon

1 ts Baking soda

1 ts Salt

1 c Nuts; chopped

2 md Apples;peeled,finely chopped

Preheat oven to 350 degrees F. Grease, or line with muffin cups, 2 one dozen muffin tins. In a large bowl, beat together the starter, eggs, oil, and vanilla. Add flour, sugar, baking powder, cinnamon, baking soda and salt; blend. Fold in the nuts and apples; transfer batter to prepared tins. Bake 25 to 30 minutes and remove from the oven. Allow muffins to cool in tins for 10 minutes, then tip out onto a rack to finish cooling completely.

Banana Friendship Bread

1/2 c Shortening

1 c Sugar

1 Egg

1 c Bananas; mashed

1 c Starter

2 c Flour

1 ts Salt

1 ts Baking powder

1/2 ts Baking soda

3/4 c Walnuts; chopped

1 ts Vanilla

1 ts Grated orange rind

Cream together the shortening and sugar, add egg, and mix until blended. stir in bananas and starter. Add orange rind & vanilla. sift flour, salt baking powder and soda, Add flour mixture and walnuts to the first mixture, stirring just until blended. Pour into greased 9 x 5 pan bake 350 for 1 hour or until toothpick comes ut clean. Cool before slicing

Carrot Cake Surprise

3 medium carrots shredded

1 cup oil

1/2 c chunky style applesauce
1/2 cup milk
3 eggs
1 tsp vanilla

In a separate bowl combine the following dry ingredients and mix well:

2 cups flour
1 cup sugar
1-1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp baking soda
1 - (5.1 oz) box instant vanilla pudding
1/2 tsp salt
1 cup nuts
1/2 c raisins
1/2 c coconut
1 tblsp cinnamon
1 tsp nutmeg
1/2 tsp clove
1/2 c chopped walnuts

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bundt pan. Bake at 325 degrees for 1 hour. Cool Completely in the pan, and frost!

Frost with Cream Cheese Frosting:

3 oz Cream cheese; softened

1 lb Confectioners' sugar

1/2 c Butter; softened

1 ts Vanilla extract

Mix thoroughly at medium speed. Frost cake!

Chocolate Friendship Bread

1 cup oil
1/2 cup milk
3 eggs
1 tsp vanilla

In a separate bowl combine the following dry ingredients and mix well:

2 cups flour
1 cup sugar
1-1/2 tsp baking powder
3 tsp. cocoa
1/2 tsp baking soda
1 - (5.1 oz) box instant chocolate pudding
1/2 tsp salt
1 cup nuts

3/4 cup chocolate chips

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 1/2 - 1 3/4 hours.

Cinnamon Buns

2 cups flour
1 cup milk

1 cup starter

Combine and let set at room temperature overnight or 10-12 hours. Stir down.

Combine:
3 t. sugar
1 egg
1/2 cup shortening
1 tsp. salt
1/2 tsp baking soda
1 tsp baking powder

Add into small bowl all at once to stir down. Pour dough out on well-floured board. Knead until no longer sticky. Roll out to 1/2" thickness in a rectangle shape. Brush dough with soft butter.



Combine:
1/4 cup sugar
1 TBS cinnamon
1/2 cup crushed nuts

Sprinkle cinnamon-sugar mixture over dough. Beginning at wide side, roll up, and seal seam. Cut 1" slices. Place on well-greased cookie sheet. Let rise 30 minutes. Bake at 350 degrees F 30-35 minutes.

Cinnamon Peach Frienship Cake

1 c starter

2/3 c Oil

3 ea Eggs

2 c Flour

1 c Sugar

1 1/2 t Cinnamon

1/2 T Salt

1/2 T Baking soda

1 1/4 T Baking powder

1 t Vanilla

2 c canned peaches, drained

Mix all ingredients together. Pour in 2 greased loaf pans. Bake at 350 degrees for 60 minutes.

Farm House Cornbread


1 cup starter

2 eggs
1-1/2 c. milk
2 tsp sugar
1/2 cup flour
1-1/2 c. cornmeal

Combine in large bowl. Beat at medium speed for 2 minutes.

Add:
1/4 cup oil
3/4 tsp baking soda
1/2 tsp salt
1 tsp baking powder

Mix well. Pour in well-greased 9" pan. Bake at 425 degreesF  for 25-30 minutes.

Fiesta Friendship Cake

1 c starter

1/4 c Butter

1 c Sugar

1 Egg; beaten

1/2 c Milk

2 c Pinto beans; Measure 2 cups of cooked and mashed beans.

1 ts Vanilla

1 c flour

1 ts Baking soda

1/2 ts Salt

1 ts Cinnamon

1/2 ts Cloves

1/2 ts Allspice

2 c Apples; diced

1/2 c Nuts; chopped

1 c Raisins

Glaze:

1 cup powdered sugar

1/4 tsp vanilla

1 T butter, melted

1 1/2 tsp milk

blend all ingredients together and beat until smooth

Don't spill the beans about the surprise ingredient!! Cream butter sugar and egg. Add rest of ingredients except for apples nuts and raisins. Mix well then fold in apples nuts and raisins. Pour into a well greased 10 inch tube pan or bundt pan. Bake 375 for 45 minutes or until done. Cool in pan for 5 minute before removing. Glaze and decorate with maraschino cherry halves and chopped nuts.

Friendship Cookies

1 Cup starter
2 eggs
1 Tbsp molasses
3/4 cup butter
2 tsp vanilla
Mix well. Sift together:
2 Cups flour
1 cup sugar
1 tsp salt.

Bake at 375 for 10 to 13 minutes.
Chocolate Chip Option: Add 1 extra cup flour. Add 2 cups chocolate chips and 1 cut nuts
Oatmeal Option: Add 2 cups oatmeal, 1 tsp nutmeg, 2 tsp cinnamon, 1 cup chocolate chips and 1 cup raisins.

Friendship Fruitcake

1 1/2 c Starter

2 1/2 c Sugar

28-oz Sliced peaches

2 c Sugar

20-oz  Pineapple chunks

2 c Sugar

28-oz Fruit cocktail

1 sm Jar Maraschino cherries

Cakes:

1 pk Yellow Cake mix without pudding

2/3 c Oil

4 Eggs

1 pk Instant vanilla pudding mix

Fruit mixture

1/2 c Nuts; chopped

You need a gallon container with lid for this recipe.

First day. Mix starter, 2 1/2 cups sugar and peaches. Stir on days 2, 3, 4, 5, 6, 7, 8, and 9. Tenth day. Add 2 cups sugar and pineapple chunks. Cover. Stir on days 11, 12, 13, 14, 15, 16, 17, 18, and 19. Twentieth day. Add 2 cups sugar, fruit cocktail and cherries. Cover and stir. Stir on days 21, 22, 23, 24, 25, 26, 27, 28, and 29. Thirtieth day. Drain juice from fruit and divide fruit into 3 equal parts. Divide juice into five 1 1/2 cups portions and give to friends. Use starter within 5 days. The fruit mixture will make 3 cakes.

To Make Cake. Mix cake mix, oil, eggs and pudding on low speed of mixer. Batter will be thick. Add fruit and nuts. Bake in well greased and floured Bundt or tube pan. Bake 45-60 minutes, depending on oven, in 350~ oven. Cool in pans completely before removing. None of the recipe should be refrigerated while brewind. Cakes may be refrigerated for 2 weeks or frozen up to 2 years. DO NOT freeze juice.

In a bowl, combine and mix well:
1 cup oil
1/2 cup milk
3 eggs
1 tsp vanilla

1 cup Starter

In a separate bowl combine the following dry ingredients and mix well:
2 cups flour
1- 1/2 cups sugar
1-1/2 tsp baking powder
1/2 tsp baking soda
1 - (5.1 oz) box instant chocolate pudding
3 heaping TBS of cocoa
1/2 tsp salt
1 cup pecans or walnuts

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 hour.

Harvest Friendship Bread

1 cup oil
1/2 cup milk
3 eggs
1 tsp vanilla

1 tsp grated orange zest

In a separate bowl combine the following dry ingredients and mix well:

2 cups flour
1 cup sugar
1-1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp baking soda
1 - (5.1 oz) box instant vanilla pudding
1/2 tsp salt
1 cup chopped walnuts

1 cup dried cranberries

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 hour.

Lemon Poppyseed Friendship Cake



1 cup oil
1/2 cup milk
3 eggs

In a separate bowl combine the following dry ingredients and mix well:

2 cups flour
1 cup sugar
1-1/2 tsp baking powder
1/2 tsp baking soda
1 - (5.1 oz) box instant lemon flavored pudding
1/2 tsp salt
1/4 cup poppyseeds

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 hour.

One day when God felt generous, He looked down at me and smiled,
"Since I feel so magnanimous, I'd like to give you something, child."

He asked me what I wanted, I said, "Oh, really nothing more,
You've done so much already." He said, "That's what God is for."

"You have been pretty good," He said, I know there's not much that you seek,
I will pick a little something, Just to make your life complete."

With great anticipation, I looked forward to my gift,
I wondered what God had in mind, That would give me such a lift.

"This gift," God said, "You realize, Bears some responsibility,
So, if you accept my present, You must be willing to agree...

"To offer unconditionally, A section or a part,
Of more than half of you, The larger portion of your heart."

"Okay, God," I answered, "Since in You, I always trust,
I'll meet your obligation, In the manner that I must."

To myself, I thought, wow, what a gift, For so much of me, God's asked,
Now what could be so valuable, That my share was more than half?

With both hands I sought my gift, I still did not have a clue,
Then God put your hand in mine, And said His gift to me was YOU!

Nutty Butterscotch Friendship Bread

1 cup oil
1/2 cup milk
3 eggs
1 tsp vanilla

In a separate bowl combine the following dry ingredients and mix well:

2 cups flour
1 cup sugar
1-1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp baking soda
1 - (5.1 oz) box instant butterscotch pudding
1/2 tsp salt
1 cup chopped pecans

1 cup butterscotch chips

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 hour.

OatNut Crumble Coffee Cake

1 cup starter

2/3 cup oil

1 teaspoon vanilla

1 cup sugar

2 cups flour

1/2 teaspoon baking soda

1 1/4 teaspoons baking powder

1/2 teaspoon salt

3 eggs

1 teaspoon cinnamon

1 cup nuts and raisins mixed

Topping:

1/3 cup melted butter

1/2 Cup sugar

1/2 Cup brown sugar, packed

2 Teaspoons cinnamon

1/2 Cup oats quick-cooking

1/2 Cup nuts

To the 1 cup of starter add all batter ingredients, mixing well. Pour half the batter into two greased and floured loaf pans (or one 9x13 pan). Mix streusel topping and pour half of it over the batter. Add the remaining batter, then the remaining streusel and bake at 350 for 40-50 minutes until the cake tests done.

Orange Delight Cupcakes

1/2 c Butter

3/4 c Sugar

2 Eggs; beaten

1/2 c starter

1 c Milk

1/2 ts Vanilla

2 c Flour

1/2 ts Baking powder

1/2 ts Baking soda

1/4 ts Salt

Grated peel of 1 orange

1 c Raisins

1 c Pecans; finely chopped

Cream butter and sugar, add eggs, starter, milk and vanilla. mix well. add dry ingreidents and mix well. fold in grated orange peel, raisins and pecans. fill well greased and floured muffin tins 2/3 full. bake at 350 for 20-30 minutes or until done. remove from pans and dip in topping. makes 12-14 servings.

Topping: Juice of 1 orange 1/2 cup sugar combine oj and sugar. Heat until sugar has dissolved

Pancakes & Waffles

Pancakes

Combine in large bowl:
1 cup flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda

Combine in smaller bowl:
2 TBS oil

2 cups starter
1/2 cup milk (plus/minus 1/4 cup)
1 egg

Add ingredients of smaller bowl to ingredients of large bowl and mix on medium speed.
Spoon batter onto greased griddle.

Waffles

Prepare batter for pancakes except increase oil to 1/4 cup.

White Chocolate Almond Bread

1 cup oil
1/2 cup milk
3 eggs
1 tsp almond extract

In a separate bowl combine the following dry ingredients and mix well:

2 cups flour
1 cup sugar
1-1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp baking soda
1 - (5.1 oz) box instant white chocolate flavored pudding
1/2 tsp salt
3/4 cup chopped almonds

3/4 cup white chocolate chips

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 hour.

Zucchini Amish Loaf

1 cup oil
1/2 cup milk
3 eggs
1 tsp vanilla

1 cup grated zucchini (squeeze out excess liquid!)

In a separate bowl combine the following dry ingredients and mix well:

2 cups flour
1 cup sugar
1-1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp baking soda
1 - (5.1 oz) box instant vanilla pudding
1/2 tsp salt
1 cup nuts

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 1/2 hours.
