PRINCESS CRUISES BAR DEPARTMENT

The following information is a guide to the various spirits, liqueurs, beers and wines by the glass that we serve onboard our vessels. As a member of the onboard beverage department you should have a good knowledge of the history of the beverages that you serve and a good knowledge of how they are produced.



This will both assist and make you comfortable in recommending products and, more importantly, up-selling premiums to our passengers.

WHISKEY & WHISKY

l Whiskey and Whisky both refer to alcohol distilled from grain.

l Whiskey is the usual American spelling, especially for beverages distilled in the U.S and Ireland.

l Whisky is the spelling for Canadian and Scotch distilled beverages.

l Like Vodka, Whiskey is distilled from grain. The reason Whiskey is not a clear beverage like vodka is due to the fact that it is aged in wooden barrels. The spirit absorbs color and flavor from the barrels during aging, hence the golden brown color.

l There are many different types of Whiskey. These are each distinguished from each other from the percentage of certain grain ingredients used in their production and the length of time for which they are aged.

l Whiskey gets its smokey flavor from the process of malting barley. The germinated grain is dried in a kiln over a peat fire, permeating the barley malt with the aroma and flavor of peat smoke, which is later imparted to the Whiskey.

DEWARS (WHITE LABEL)

l Established in 1846 when John Dewar, formerly a carpenter, opened a small wine and spirits business in Perth, Scotland.  He was the first to bottle whisky, whereas previously, all whiskies had been sold in kegs or stoneware jars. Although Dewar's is rarely seen in the UK, it is the biggest selling Scotch whisky in the USA, which accounts for around 3 million cases each year.

l Made in Perth, Scotland.

J&B RARE

l J & B refers to the names of its producers, Justerini & Brooks, who have been producing wines since 1749. The production of their famous whisky commenced in 1900.

l This was a time when sophisticated and aristocratic palates were acquiring a taste for Scotland's "Uisquebeatha," the Gaelic word for "Whisky."

l Over 40 different malt and grain whiskies are matured and then married together for an unusually long time. They combine to create an exceptionally smooth, rounded flavor with a delicate aroma and well-balanced finish.

l 43% alcoholic content.

JOHNNIE WALKER RED

l In 1820, John Walker, the son of an Ayrshire farmer, established a grocery business that by 1865 would be a firm of whisky merchants. Today, Johnnie Walker Red has become the world's best selling Scotch.

l This Whisky is aged in wood for less than 8 years.

l Made in Kilmarnock, Scotland.

JOHNNIE WALKER BLACK

l This Whisky is aged in wood for 12 years and contain 232n134c s around 40 single malt whiskies including Cardhu, Talisker and Lagavulin.

l JWBL was the favorite Scotch of Sir Winston Churchill.

JAMESON'S IRISH WHISKEY

l John Jameson founded his whiskey distillery in Dublin, Ireland in 1780.

l From the rich countryside of Ireland come some of the world's finest barley and crystal clear water.  These natural ingredients are carefully distilled three times, and slowly matured for long years in oak casks to create the natural, smooth whiskey that is "Jameson."

CHIVAS REGAL

l This is a 12 year old Whisky made in Keith, Scotland

l Distinguished by its light, lingering aroma, full, smooth palate and balanced flavor with a hint of smoke, Chivas Regal is a scotch of subtle and complex character.

l From its origin at the oldest distillery in the Highlands, this blend of the finest malt and mature grain whiskies deserves the accolade "Scotland's Prince of whiskies."

CHIVAS ROYAL SALUTE

l This is a 21 year old Whisky, with all whiskies that it compromises being aged for 21 years.

l By an ancient custom, originating in the Royal navy, a salute of 21 guns is the prerogative of the reigning sovereign. Royal Salute whisky, created to celebrate the coronation of her Majesty, Queen Elizabeth, symbolizes this homage.

l 40% alcoholic content.

GLENFIDDICH

l Single malt whiskies refer to the fact that they are straight, unblended malt whiskies from a single distillery.

l Glenfiddich has been made by William Grant and sons since 1887, in Banffshire.

l Glenfiddich was first distilled on Christmas Day in 1887. Since then, Glenfiddich has always been produced exclusively with pure water drawn from the crystal clear Robbie Dhu springs close to the distillery.

l Today Glenfiddich is the only malt whisky from the highlands of Scotland that preserves this tradition of using only one single source of spring water throughout its entire distillation, maturing and bottling. For over 100 years the quality of Glenfiddich has been sustained by never compromising the traditional standards of production. Quality that can be appreciated in the glass through its purity, elegant taste and long lingering finish.

CLASSIC SINGLE MALTS OF SCOTLAND

l Single Malt is one of the world's great drinks with plenty of mystique. There are more than 100 distilleries in Scotland, each one creating a taste peculiar to its own location.

l The location of these distilleries are grouped into 4 regions - Lowland, Highland, Islands and Speyside - and the malts produced there classified into these geographical zones, each representing the flavour of it's region.

l The 4 malts sold on board all Princess vessels are:

l GLENKINCHIE - LOWLANDS.

l DALWHINNIE -HIGHLANDS.

l CRAGGANMORE - SPEYSIDE.

l TALISKER - ISLE OF SKYE.

GLENKINCHIE

l Glenkinchie lowland malt whisky has a light delicate nose and a fresh clean aroma. The finish is smooth, with a subtle hint of dryness. A truly fine distinctive Single Malt, excellent as a pre dinner drink.

l 43% alcoholic content.

DALWHINNIE

l From the highest distillery in Scotland, set in the windswept Grampian Mountains with their unlimited supply of fresh spring water, comes this delightfully gentle, delicately smokey malt.

l 43% alcoholic content.

CRAGGANMORE

l An elegant, sophisticated Speyside malt with the most complex aroma. Astonishingly fragrant with sweetish notes and a Smokey maltiness on the finish.

l 40% alcoholic content.

TALISKER

l Affectionately known as the "Golden Spirit of Skye," this malt has more than a hint of local seaweed, peppered with sour and sweet notes and a memorable warm peaty finish.

l 45.8% alcoholic content.

BOURBON

l Bourbon takes its name from Bourbon County in Kentucky, where it was first produced in 1789 by a Baptist minister.

l The rules are that it must be made from at least 51 percent corn, aged in new oak barrels, and matured for at least 2 years.

l While bourbon must be made from at least 51 percent corn, a higher percentage doesn't necessarily make a better whiskey. A 100 percent corn whiskey just doesn't have the depth and complexity of one made from a blend of corn, rye and barley. The upper limit for corn seems to be about 70 percent if the distillery wants to make a notable bourbon.

l Bourbon is darker than scotch as a result of being aged in wooden casks, the insides of which have been charred.

l Although bourbon is Kentucky's leading export and its production directly employs thousands of people, it is illegal to buy the product in the very counties in which it is produced. They are all, to this day, still dry.

JACK DANIELS

l Jack Daniels was the first liquor to be marketed in a square bottle. Made in Lynchburg, Tennessee since 1866, Jack Daniels is filtered through sugar maple charcoal in the oldest registered distillery in the United States.

l Jack Daniels is actually a sour mash whiskey.

l 43% alcoholic content.

JIM BEAM

l Originated by Jacob Beam in 1795, Jim Beam is the product of six generations of distillers. Jim Beam is a four year old Kentucky straight bourbon whiskey and has supposedly been produced by the same formula since 1795.

l 40% alcoholic content.

WILD TURKEY

l It was first savored as a specially selected barrel bourbon by a group of hunters seeking the remarkable wild turkey bird, a native of North America. Today it is distilled according to old-time Kentucky traditions, and matured in new charred white oak barrels until it becomes the legendary, smooth bourbon whiskey known as Wild Turkey.

l 50.5% alcoholic content.

SOUTHERN COMFORT

l The legend began over 100 years ago in New Orleans when M.W.Heran perfected his recipe for this smoothest of spirits. Over the years its reputation and popularity spread, establishing it as an American classic.

l Southern Comfort was originally marketed in 1875 as "Cuff and Buttons."

l A Southern Comfort Manhattan should be made with dry vermouth.

l America's first proprietary liqueur is sweet and tasty, with a distinctive whiskey aftertaste from the bourbon used in its production.

l 38% Alcoholic content.

CANADIAN & AMERICAN BLENDED WHISKIES

l Canadian Whiskey dominance, and in particular Seagram's, can be attributed to Prohibition. During this infamous dry period in U.S. history, Canadian Whiskey literally poured down the hill into America's illicit "Speakeasies".

l After Prohibition was abolished in 1933, the federal alcohol administration allocated the importation of 3,314,443 gallons of whiskey (for medical purposes!!), most of which came from Canada. The results from this boom can be seen in the various buildings, libraries, and hospitals in downtown Montreal bearing the name Bronfman, the founding family of the Seagram's corporation.

l The most popular brands of Canadian Whiskey are, Crown Royal, Canadian Club and Seagram's V.O. which are called for by name in bars the world over.

l For beginning whiskey drinkers, these are the lightest and easiest whiskeys to drink:

CROWN ROYAL

l Canadian whiskies actually contain a small amount of sherry to soften and mellow the blend.

l Crown Royal is a regal blend of treasured whiskies each imparting a rare characteristic to create this superb whisky of unequaled taste.

l Introduced in 1939 to commemorate the unprecedented visit of King George and Queen Elizabeth to Canada.

l 43% alcoholic content.

CANADIAN CLUB

l This six year old blended whisky has been made by Hiram Walker in Ontario, Canada, since the late 1800's.

l 40% alcoholic content.

SEAGRAMS V.O.

l This is a six year old Canadian whisky. The V.O stands for Very Own.

l 40% alcoholic content.

SEAGRAMS 7 CROWN

l Made in Lawrenceburg, Indiana, since 1857.

l More than 50 distilled spirits comprise the blend of this whisky, which has the distinction of being the best selling whiskey in the U.S.

l 40% alcoholic content.

VODKA

l Vodka is a clear spirit of high purity. It can be made from a wide range of raw materials, mostly grain is used. The word "Vodka" actually means "Pure Water"

l Most vodka is made from cereals. Traditionally rye was used most often and is still the main ingredient of most Polish vodkas. Wheat is the main cereal used in other countries. Other cereals, such as oats and barley are also used.

l Vodka is distilled to an extremely high alcohol content; as a result, nearly all of the congeners and particulate that give a spirit flavor and color are distilled out of vodka. Subsequent to distillation, vodkas are also filtered to remove any remaining trace impurities.

l Most vodka will be sold as plain vodka. Other vodka, however, is flavored. There are many traditional Polish and Russian flavored vodkas, and in recent years, many Western producers have released many flavored vodkas, typically flavored with citrus, pepper, or fruits.

ABSOLUT

l This superb vodka is distilled from grain grown in the rich fields of Southern Sweden. It has been produced at the famous old distilleries near Ahus in accordance with more than 400 years of Swedish tradition. Vodka has been sold under the name Absolut since 1879.

ABSOLUT CITRON

l Absolut Citron is made from natural citrus flowers and vodka distilled from grain grown in the rich fields of Southern Sweden.

ABSOLUT KURANT

l This vodka bears the distinctive flavor of natural black currants, which grow throughout Sweden, even above the Arctic Circle.

l 40% alcoholic content.

SMIRNOFF

l Distilled in Russia since 1860, "Smirnov" was the official purveyor of vodka to the Royal Court and Czars of Russia.

l By 1917 and the overthrow of the Czar during the Russian Revolution, Smirnoff was producing one million bottles of vodka every day. Today, Smirnoff is produced in the USA and is now owned by Guinness UDV.

l Crisp, clear Smirnoff is distilled from the finest grains and filtered in a unique, patented process. 

l 40% alcoholic content.

STOLICHNAYA

l Produced using authentic Russian methods. Pure spirit distilled from selected grain is filtered through birch charcoal and quartz sands and blended with pure, natural spring water.

l Stolichnaya is a true Russian vodka, distilled in Russia's oldest distillery.

l 40% alcoholic content.

GREY GOOSE

l Grey Goose is a super premium vodka, created with clear mineral water from the springs of Gente in the Cognac region of France, where it is filtered through Champagne limestone, a natural purifier.

l Made using the finest grain from the lush farmlands of France. Grey Goose is handcrafted in small batches.

l Grey Goose is the result of a five step distillation process that begins in a traditional copper pot still.

l In a recent survey of Super Premium Vodka's conducted by "Wine Enthusiast" magazine Grey Goose was awarded 96 points out of a possible 100.

GIN

l Gin is spirit alcohol flavored from juniper berries. First made by the Dutch, it was called Junever, the Dutch word for "Juniper." The French called it Genievre, which the English changed to "Geneva" and then shortened to Gin, as it is known today.

l Invented in 1650 in the Netherlands, gin was originally intended as a remedy for kidney disorders.

l London dry gin refers to the fact that the gin is dry, funny that!! Only Beefeater is actually made in London though. English gins are generally more flavorful and considered superior to American gins.

BEEFEATER

l The Beefeater represents the corps of men William the Conqueror hand picked almost 1000 years ago to guard the Tower of London. The beefeater marching out of the post and into the future to set a standard.

l Gin has been made in England since the early 17th century. During the 19th century, James Burrough combined the wild flavor of juniper with the subtle sweetness of angelica and the spicy orange of coriander into a gin both aromatic and captivating.

l 47% alcoholic content.

TANQUERAY

l The pineapple emblem depicted on the bottle of Tanqueray is an integral part of the Tanqueray family crest and the traditional symbol of hospitality.

l The bottle shape was designed in the 1920's to mimic the shape of a cocktail shaker.

l 47.3% alcoholic content.

BOMBAY SAPPHIRE

l The singular taste of Bombay Sapphire is quite unlike any other London dry gin. While most gins take their flavor from four or five botanicals, Bombay Sapphire uses no less then ten, achieving an altogether more balanced and refined taste.

l Almonds (Spain). Lemon peel (Spain). Liquorice (China). Juniper berries (Italy). Orris, iris roots (Italy). Angelica root (Saxony). Coriander (Morocco). Cassia bark (Indo-China). Cubeb berries (Java). Grains of paradise (West Africa).

l Furthermore, the distilling process is unique. All other gins boil up the botanicals with the spirit. On the other hand, the spirit of Bombay Sapphire is distilled alone and passes in vapor form through the perforated copper botanicals basket. This allows each delicate aroma to be fully absorbed and establishes Bombay Sapphire's reputation as the world's finest London dry gin.

RUM

l Rum is the alcoholic distillate from fermented sugar cane juice or molasses.

l Cuban rum is light-bodied and light-colored. During distillation, the liquid is aged in unshaved oak barrels. It is then deodorized, filtered and supplied with some caramel to give it the proper color. Occasionally, some fruit aroma is added. It is then aged for several years.

l Jamaican rum is heavier bodied.

l The rum industry developed in conjunction with the growth of sugar plantations in the West Indies. Beginning in the 17th century, distilleries operating in New York and New England produced rum from West Indian molasses. Traders used rum profits to buy slaves in Africa; the slaves were sold in the West Indies for cargoes of molasses that became New England rum.

BACARDI

l In 1862, Facundo Bacardi bought an old, tin-roofed distillery near the Santiago de Cuba harbor. There he created the spirit that was to define the quality standards for rum, smoother and more drinkable than ever before.

l His original recipe continues to be a family secret, which has been passed down through six generations of master blenders.

l Filtered through charcoal for smoothness and aged in oak for character.

l In 1892, the young heir to the Spanish throne made a miraculous recovery from a life-threatening disease after drinking several shots of Bacardi.

l Bacardi 151 is 75.5% alcoholic content.

BACARDI 151

l Bacardi 151 is a premium, high proof golden rum, traditionally used for making delicious, exotic Island drinks.

l 75.5% alcoholic content.

BACARDI LIMON

l Bacardi Limon is simply Bacardi infused with Lemon.

l 40% alcoholic content.

MYRE'S DARK RUM

l Made in Kingston since 1879.

l Distilled in the traditional pot still method and allowed to mature in white oak barrels. It is this final aging period that plays a critical role in determining the distinctive dark color and rich, buttery flavor.

APPLETON'S ESTATE

l A fine aged rum produced by J. Wray & Nephew Ltd, proprietor of the Appleton Estate, where rum has been distilled since 1749. Born in Old Copper stills and aged in Oak casks, the rich full flavor of Appleton Estate is the ultimate expression of the rum maker's art.

l 40% alcoholic content.

CAPTAIN MORGAN SPICED RUM

l Born to wealthy Welsh parents, Captain Morgan left the comfortable life for one that proved far more satisfying.that of a buccaneer on the Spanish Main. His feats were many, his exploits endless, and his thirst legendary.

l Captain Morgan spiced Rum is a magnificent golden Puerto Rican Rum laced with spices and other natural flavors.

l 35% alcoholic content.

CRUZAN COCONUT RUM

l Premium white Cruzan Rum flavored with natural Coconut for a refreshing and exotic taste experience.

l 27.5% alcoholic content.

TEQUILA

l Despite its image, tequila has no more alcohol than scotch or any number of other spirits. And like them, tequila is distilled from fermented plants.

l Scotch is made from barley, bourbon from corn and rye, rum from sugar cane, and tequila from the agave plant. Though it is often mistaken for a cactus, this tough-skinned plant with pointed, barbed leaves is actually more closely related to the lily. 

l There are some 400 types of agave, but tequila is made from only one, the blue agave, which flourishes in Guadalajara, the capital of Jalisco state. 

l The plant is harvested when it has reached a height of about four feet, which takes around ten years. Its heart, which resembles a pineapple and is called a pina, is baked (transforming the starches to sugar), then ground, shredded and washed with water. The resulting juice is fermented and distilled to produce tequila, which is named after a small town in Jalisco that is a major producer of the spirit.

l Only the best tequilas, the so-called "premiums" or "super-premiums" are made entirely from blue agave. Many ordinary tequilas, inexpensive, primitive, hangover-inducing types contain as little as 51% blue agave sugar combined with 49% fermented and distilled sugar syrup.

l There is actually no worm in tequila. It is in Mezcal, a spirit beverage distilled from a different plant. And it's not actually a worm, but a butterfly caterpillar (Hipopta Agavis) called a Gusano.

l Established in 1795 by Jose Cuervo and distilled by Los Camichines, S.A. Jalisco, Mexico. This 1800 Reserva tequila gets its rich golden color for being rested in French Oak barrels. This smooth and delicious Tequila is ideal for sipping and famous for the ultimate Margarita.

COGNAC

l The roots of cognac are within a legend of a knight of the Cognac region in the 16th century. He thought he might burn in hell -- once for murdering his unfaithful wife, and a second time for killing her lover. Thus he "burnt his wine" twice and put it in the cellar. It was found some five years later and obviously feeling better about his fate, he entertained. News of this new process spread throughout the region and they were soon all using this process to burn their acidic poor wine into "cognac". News didn't stop here. Cognac became synonymous with fine brandy. In 1909, the French declared only Brandy was to be made in the immediate surrounding area of the town of Cognac. Most commercial cognacs are aged less than ten years; Cognac is best aged up to 50 years. In the aging process, some evaporation takes place. This is commonly referred to as "the Angel's share".

l Brandy is basically a distilled wine. An attempt to ship wine in a condensed form in medieval times resulted in this spirit's name. The term "Brandy" comes from Holland. The Dutch called this new spirit, "Brandewijn" which means, "burnt wine".

COUVOISIER V.S.O.P.

l Legend has it that Napoleon held Emmanuel Courvoisier cognac in such high esteem that he took 100's of bottles with him to enjoy during his years in exile.

l This reserve became known as "Le cognac de Napoleon," a description still proudly borne today on all Courvoisier cognac.

REMY MARTIN V.S.O.P.

l A fine Champagne Cognac, which is derived from grapes grown solely in the two premier areas (Grande Champagne and Petite Champagne) of the Cognac district of France.

COUVOISIER NAPOLEON

l A fine Champagne Cognac, derived from grapes grown solely in the two premier areas (Grande Champagne and Petite Champagne) of the Cognac district of France.

REMY MARTIN X.O.

l The fine champagne cognac comes exclusively from the distillation of wines from the Grande Champagne (80%) and Petite Champagne (20%) growth areas.

l 40% alcoholic content

PORT & SHERRY

l Port is a natural, rich, fortified wine produced from grapes grown in the Douro region in Northern Portugal, matured in wood before being blended and bottled.

l Centuries ago, the Douro region simply produced full-bodied wines, intense in color and flavors and likely to ferment during transportation. To combat this fermentation, some "brandy" was added to help stabilize it for the long journey and, by a stroke of luck, port was born.

l Sherry is a blended fortified wine produced in Jerez de la Frontera, Spain. Aged and blended in large American oak casks by the solera system.

COCKBURN'S RUBY PORT

l For over 175 years, Cockburn's have selected port wines from the highest quality areas of the Demarcated Douro region of Portugal. They are blended and matured in oak casks in their lodges and finally bottled in Villa Nova de Gaia.

l Cockburn's fine ruby port is a superb example of the ruby style, a smooth, full-bodied wine with a fruity flavor.

l 20% alcoholic content.

SANDEMAN'S 20 YEAR OLD TAWNY PORT

l Made since 1790, this is a complex wine combining fruit and hints of oak, with an appealing, mahogany amber color, and a ripe full taste which lingers on the palate.

TIO PEPE

l Produced and exported since 1835, Tio Pepe's name means "Uncle Joe" in Spanish.

l Tio Pepe is the world's best selling Fino Sherry and is made entirely from Palomino Fino Grapes with an estimated ageing time of five years.

l 17% alcoholic content

HARVEY'S BRISTOL CREAM

l In the second half of the 18th century, supplies of the finest Saxony smalt, a pigment of cobalt, were imported through Bristol. The City's glass furnaces glowed hot and "Bristol Blue Glass" was created. With its unique, rich hue Bristol Blue became an inspiration to the artisan craftsmen.

l In the same era, Harvey's opened the doors of its Denmark Street cellars, where Bristol Cream was to be created by the skillful blending of the choicest of fine Sherries shipped from Spain.

l 17.5% alcoholic content

DRY SACK

l Amber in color, Dry Sack will satisfy the most demanding palates. Produced from a specially selected blend of Amontillado, Oloraso and Pedro Ximenez Sherrie, Dry Sack creates a perfect harmony after careful aging in the oak casks of its exclusive solera.
