BANANA BREAD MISS PEACHES
Preheat oven to 350degrees if necessary*
2/3 cup butter
1 cup Demerara sugar
1 ½ cups flour
1 tsp baking powder
1 tsp. baking soda
½ tsp salt
3 large ripe bananas
1 tsp pure vanilla essence
Cream butter in food processor. Add sugar
slowly, scraping sides of container frequently
Until butter-sugar mixture is light and fluffy.
Add eggs and process into sugar-butter mixture, scraping sides frequently.
Add vanilla and process again briefly to incorporate.
Sift together dry ingredients and stir well to distribute salt, soda etc.
Add alternately with bananas, processing briefly in between and scraping sides.
Turn into buttered and floured loaf pan.
If cooking in microwave/convection oven,
Cook for 17 minutes at Low/Mix Bake.(350 degrees)
*If baking in conventional oven,
bake for 45 minutes at 350 degrees (moderate)
and 15 minutes at 375 degrees.
